What End-Grain Actually Means

End-grain means the wood fibers stand vertical, like a tight bundle of straws pointed up at your knife. You cut into the ends of the fibers instead of across their sides. When the edge comes down, it meets the ends of the fibers rather than slicing across their sides. That is the reason an end-grain board scars less than a flat-grain one and stays easier on a blade.
