Is oak good for cutting boards?

Does oak trap bacteria in a cutting board?

Washing the surface does not always flush them, so the board stays damp inside longer, and damp wood is where bacteria and mold get comfortable.

Is white oak better than red oak for a cutting board?
Yes, white oak is meaningfully better than red oak, though still behind maple. The difference is tyloses, the natural plugs that fill white oak's pores and make it water-resistant enough for barrels and boat-building. Those plugs mean white oak absorbs less water and traps less food than red oak. If someone is determined to use oak, white oak is the only version worth considering.
Even then, white oak still carries high tannins and a coarser grain than maple, so it stains and shows wear more readily. It makes a serviceable rustic board.
