Maple vs. Glass Cutting Boards: Why Glass Destroys Your Knives

Glass cutting boards are bad for your knives. Not "suboptimal" or "harder on edges" — genuinely damaging in a way that costs you real money and real frustration. This isn't a wood advocate's opinion. It's physics.

Why does glass ruin knives?

It isn't a hardness contest. Hardened kitchen knife steel is comparable to, and often harder than, ordinary soda-lime glass. Hardness isn't the reason glass wrecks edges.

The reason is compliance — how much the surface gives when the edge lands. Wood fibers yield microscopically and let the edge sink in, so the impact spreads out. Glass doesn't yield at all. The very thin, brittle apex of the edge absorbs the whole impact and micro-chips or rolls. Glass is also mildly abrasive at that scale, which grinds at the edge on every pass. Is glass hygienic enough to justify the trade-off?
