Wood is the more sanitary choice over the life of the board — plastic only wins while it's new. New boards of both materials test about the same. Somewhere along the way, the idea took hold that plastic cutting boards are more sanitary than wood. Health departments promoted it. Cooking shows repeated it. It made intuitive sense: plastic is non-porous, easy to bleach, and you can run it through the dishwasher.
The problem is that the science doesn't support it. Not anymore.
The Research That Changed the Conversation
In the 1990s, microbiologist Dean Cliver at UC Davis conducted a landmark study comparing wood and plastic cutting boards for bacterial retention. What he found turned the conventional wisdom upside down. His work was later published in the peer-reviewed Journal of AOAC International as "Cutting boards in Salmonella cross-contamination" (2006).
New plastic boards and new wooden boards were roughly equivalent in bacterial retention when tested immediately after contamination. But when tested after extended use — with knife scarring, washing, and realistic kitchen handling — the results diverged dramatically.
Laboratory studies have reported differences in bacterial recovery from used wood and plastic surfaces. Those findings do not make wood self-sanitizing or prove a universal antimicrobial advantage in every kitchen. Proper cleaning, sanitizing when appropriate, thorough drying, and replacing or resurfacing deeply damaged boards remain essential.
Why Plastic Boards Fail Over Time
A brand new plastic board is easy to clean. But plastic cutting boards don't stay new for long. Every knife pass leaves a score mark... and score marks in plastic are exactly what the UC Davis research identified as bacterial harborage points.
Once a plastic board is deeply scarred, it can become harder to clean effectively. Follow the manufacturer's sanitizing instructions and replace the board when grooves or damage prevent thorough cleaning.
Professional kitchens solve this by replacing plastic boards frequently. At home, most people keep the same plastic board long past the point where it should have been retired.
Why End-Grain Maple Holds Up Better
End-grain maple has two properties that work in its favor for sanitation:
hard-wearing surface: When you cut on end-grain wood, your knife passes between the wood fibers rather than across them. The blade meets the ends of the fibers rather than crossing them. This means knife marks don't accumulate into open grooves the way they do on plastic or edge-grain wood. Natural antimicrobial properties: The tight fiber structure of hard maple (Acer saccharum) draws bacteria into the wood where they don't thrive. The Dishwasher Argument
Plastic's main practical advantage is that it's dishwasher safe. Wooden boards are not — the heat and prolonged moisture exposure will warp and crack even a well-built board.
But here's the thing: a hardwood board cleaned properly with hot water and dish soap, dried vertically, is effectively sanitized for normal cooking use. The dishwasher isn't the only path to a clean board.
If you share a kitchen with immunocompromised individuals or regularly work with raw poultry, a dedicated plastic board for raw protein is a reasonable precaution — and replace it frequently. But for everyday cooking, the evidence points toward hardwood as the more hygienic long-term choice.
What About Bamboo?
