The Janka hardness scale measures how much force it takes to press a steel ball halfway into a piece of wood, reported in pounds-force (lbf). For cutting boards, the sweet spot is 900 to 1,500 lbf: hard enough to resist knife scarring and denting, soft enough to protect your knife edges. Hard maple sits right at the top of that range at 1,450 lbf, which is why it is the benchmark board wood. Harder is not automatically better, and bamboo is the proof.

Understanding this one number cuts through most of the confusion in the category. People assume the hardest wood makes the best board, then buy acacia or bamboo and wonder why their knives went dull and the board chipped. Why is harder wood not always better for cutting boards?

Because a board that is too hard wears your knives and can chip instead of denting. Once you push past about 1,500 lbf, the surface stops being a forgiving landing for the blade and starts acting like an abrasive. Acacia and bamboo both illustrate this: high hardness numbers, poor real-world results, because hardness came packaged with unstable or abrasive structure.

Grain structure and stability matter as much as the raw number.
