Avoid four things: open-grain hardwoods like oak and ash, every softwood including pine and cedar, anything laminated from plywood or MDF, and any board whose listing will not name the species.
That last one catches more bad boards than the other three combined. A maker who knows they are selling hard maple says so. A listing that says "premium hardwood" is hiding something.
What woods should you avoid for a cutting board?
Open-grain species, softwoods, and engineered panels. Each fails for a different reason, and the reasons matter more than the list, because new species show up in the market constantly.

Why is open grain the real problem with oak and ash?
Because open-grain woods have visible vessels running through them, and those vessels are open channels. Run a fingernail across red oak and you can feel the pores. That is where onion juice, raw chicken drip, and beet pigment go.
Closed-grain woods like hard maple are diffuse-porous, with small uniform pores and no continuous channels. That single structural difference is why maple is the professional standard and why oak, despite being a perfectly good floor and furniture wood, is a poor cutting surface. Oak is not dangerous. It is just harder to keep genuinely clean than a closed-grain board, and no amount of oiling changes the pore structure.
Which softwoods should never be used?
All of them. Pine, fir, spruce, cedar, and redwood sit between roughly 350 and 900 lbf on the Janka scale, against 1,450 for hard maple. A knife does not cut them so much as excavate them.
Cedar has a second problem. Its aromatic oils are the reason cedar chests smell like cedar, and those oils do not stay put when you cut wet food on them. A cedar plank is excellent under a salmon fillet on a grill. It is a poor place to dice an onion.

Are any woods genuinely unsafe for food?
Very few, and the risk is usually overstated online. The species commonly flagged, such as cocobolo, wenge and rosewood, are known irritants mainly to woodworkers breathing the sawdust, not to cooks using a finished, sealed board.
The honest position: for a finished cutting board, grain structure and hardness matter far more than exotic-timber toxicity scares. The genuine food-safety concern is not the species at all. It is engineered panels, where the adhesive was never formulated for repeated food contact.
If you have a nut allergy in the house, that is a real and specific reason to ask about walnut. Otherwise, buy a named domestic hardwood and the question does not arise.

What about bamboo, acacia and rubberwood?
All three are common and all three have specific drawbacks worth knowing before you buy.
Bamboo is not wood at all. It is a grass, assembled from glued strips, and its tissue accumulates silica, the abrasive in sand and glass. Full detail in maple vs. bamboo.

Rubberwood is the plantation timber left after latex production ends. It is cheap, light, and softer than hard maple, and it is what most unnamed "hardwood" boards actually are. See rubberwood vs. maple.
How can you tell what wood a board is actually made of?
Ask three questions of the listing. What species, named specifically. What construction, end grain or edge grain. What thickness, in inches.
A board that answers all three is usually honest. "Premium hardwood" answers none of them, and in our experience that phrasing almost always means rubberwood, soft maple, or birch. Hard maple has a specific botanical name, Acer saccharum, and makers who use it tend to say so because it costs more.
Weight is the other tell. A genuine 17 by 13 inch hard maple board at 1.75 inches thick weighs over 10 pounds. If a board that size arrives light, it is not dense hardwood.
Is reclaimed or salvaged wood safe for a cutting board?
Usually not, and the reason is the finish rather than the wood. Reclaimed timber has an unknown history: old paint, wood preservatives, pesticide treatment on pallet stock, or decades of absorbed shop chemicals. None of that is visible in the grain.
Reclaimed oak beams make handsome furniture. For a surface you cut food on, buy new stock from a maker who can tell you where it came from.
Is plywood or MDF ever acceptable?
No. Both are built from layers or fibres bonded with adhesive chosen for structural strength, not food contact, and both fail physically once water reaches the core. A plywood board delaminates. An MDF board swells and crumbles.
What should you buy instead?
